We’re not quite hopheads, but we love making all sorts of different IPA’s. DIPA, Red IPA, NEIPA, milkshake IPA, session IPA, and so many more (Ok maybe we’re hopheads). We like messing with adjuncts, and taking traditional styles to the next level. Stouts and porters are also year round, and the stouts get bigger and chewy as we brew them when winter rolls around.
Metal Monkey Brewing is in the Southwest suburbs of Chicago, we offer 15+ in house made beers varying from light to dark, hoppy to not and a few unexpected twists in between. We also serve kombucha, nitro cold brew coffee & craft sodas. Come enjoy a game off our top-notch game shelf, play a classic video game, take in some metal music or hang in the lounge in our spacious taproom.
Purveyors of both humble classic styles and bold, experimental beers that will make you question our sanity, Miskatonic Brewing is looking to spread our madness across the Midwest landscape.
Our beer is and will always be clean and consistent with a strong focus on balance. We feel our four flagship offerings best represent Pollyanna and take pride in their year-round availability (we package all of them! 3 in cans, 1 one in bottles). We're constantly experimenting with local fruits and spices, seasonal lagers, barrel-aging, wild yeast, and bacteria. In our intimate and truly unique taprooms, we offer tasting flights, draft pours, and to-go 64oz growlers or 32oz howlers.
Named “Roselare,” Pollyanna's new concept is derived from two inspirational locations; the historic West Flanders city of Roeselare, Belgium and their new home in Roselle. They plan to further explore the oddities of brewing as we grow our mixed culture fermentations and wood aging experiments by introducing two brand new oak foudres.
No matter where you’re seated in our taproom, you’ve got the best seat in the house to experience the sights and sounds of River Hawk. Our 3.5 bbl beer brewing system is on full display along with our 12 fermenters and (4) 500-gallon wine tanks. Our goal is to keep the tasting experience as authentic and organic as possible.
Proud owners Steve & Tina Nelson have been busy putting the wheels in motion this past fall… paperwork, securing funds, remodeling and even finding a brew master!!
They are excited to share their passion with all of you! They look forward to making the brewery a homey, sit down/relax, hangout and play games type atmosphere.
A skeleton key is a single key that can open many different doors—which is also what we aspire to be. Our taproom is one such door, through which you can find delicious beer, camaraderie and community. Our classes are another, through which you can develop an even deeper appreciation for craft beer and get into the nitty-gritty of what goes into making it. And our incubator is the third, through which a selected individual can gain access to the tools they need to make their own dream of opening a brewery a reality.
Whiskey Hill is a place where we take pride in our work and let the creativity flow. We hope you will taste this in every sip and create some great memories of your own.
A love for the art of craft beer. A shared vision of bringing something new and exciting to our own hometown. A desire to be a part of something bigger than ourselves. The excitement of joining the craft brewing community. To realize a dream. To meet great people and support great causes. All this and more.
